Ok, so I got a hankering for something sweet. Kids are at their aunt's and I am alone with my sweet tooth. I made a pot of coffee, and I went rummaging through my cupboard. I found a box of Duncan Hines Moist Deluxe Classic Yellow Cake Mix; I read through the ingredients; it was vegan-friendly. Ok, but now, how to make a cake without eggs? Google!!!
Egg substitutes: bananas? Who would have thunk it?
So, my brain started churning and my stomach started rumbling, and I got to thinkin'...yum.
So here is what I did:
One package above Duncan Hines Moist Deluxe Classic Yellow Cake Mix
One box Jello Cook and Serve Sugar and Fat Free Pudding
2 bananas, ripe and ready :)
1 cup water
1/3 cup vegetable oil
Mix very well on high until the lumps are gone
Spray 13x9 pan with cooking spray
layer fresh pineapple on the bottom, sliced fairly thin, but not too thin
I also tried to dice it in my food processor, but I ended up with a puree, so I gobbed that on top of the pineapple. All in all, the gob was probably about half a cup, and the cut pineapple was almost two cups.
I poured the cake mix over (it was thick) and put it in the oven at 350 for 30 min or so.
I will let you know how it turned out, as I still have 20 minutes to wait. So...am gonna go have some of that coffee.
It is now 8:03. Two pieces of cake later and two cups of coffee. I am one happy camper. Highly recommend my recipe, and the only thing I would change for next time is I would add a bit more pineapple puree. The cake was sweet, and if I could unsweeten it a bit, I would; however...deliciousoooooo!!!
The bananas made it so yummy, and it still came out light and fluffy. Who knew? Maybe next time I could pop out the vegetable oil and add applesauce instead...

DAY 5
Iza: hello i am a very happy person today. i slept in cause i didnt have school, watched a movie, and made a smoothie. the smoothie is amazing it contains.....
3 bananas
1 strawberry
1 cup almond vanilla soy milk
lots of ice
as many blueberries your heart desires
1/2 cup regular silk soy milk
PS. i izabella created this smoothie from scratch so like if its in any fancy smoothie book i have never seen it written down, or said. so you cant sue me for making this smoothie and claiming it IZABELLA'S PROPERTY. but if you read this blog you are allowed to use this recipe.

Day Four
So, busy life, song fest, snow boarding, and homework...leave no time for writing and very little for sleeping. Foods are fine. No poetry tonight. Am feeling it the hardest because healthy eating has to be intentional. Had no time to make a nice dinner tonight, so I broke a red pepper in half, scooped up some edamame hummus, and topped it off with roasted garlic cloves...while standing. I have all these wonderful staples and no time to cook. I think I will have to break out the crock pot. I'm feeling the dump and go mode coming on. There was something funny I was going to write about, but I'm so tired that I can't remember what it was. So, tomorrow is another day.

Breakfast and Lunch went fine for all of us. Dinner was another story...
Aleks made Macaroni and Chreese... (no that's not a spelling error, and it's pronounced chtrees). It's a dairy free substitute...NOT. Pasta was ok, but the sauce was sick... Stay away. I could make a homemade sauce that tastes a zillion times better. In fact, I'm going over it right now in my head, and it doesn't include melted cardboard. If I were to make a sauce now, I would melt some soy butter in a pan, add some dijon mustard, a little flour (maybe spelt) to thicken it up into a paste; then, I would add some soy or rice or almond milk (probably rice, but would taste test). I would add some soy or rice cheese substitute...cheddar flavor. Mix well, salt to taste, and top with Italian seasoned bread crumbs. That's kinda how I make my homemade mac and cheese anyways. Hmmm, will have to try this another day.
Pitched the rest of the concoction and settled in for a slice of Ezekiel 4:9 Sesame Bread with soy butter and coop peanut butter (honey roasted of course). Complete with Maxwell House vanilla coffee. Now, I'm ok.
It's interesting to listen to and see people's responses to our choice to try this. Some think we're crazy; some think we won't be able to do it; and some think we are stupid and inconveniencing them...lol, that's interesting, and it makes me want to do it more. I think that's the rebellious part of me. HA! I guess I still haven't outgrown that. Iza is finding the same response from most people, and some don't even know what vegan means...they think it's just no meat.
Aleks is still going strong...we all are. So far, it's not that hard, and we are having fun looking at recipes and trying new things. The kids are having fun making smoothies and inventing recipes. Our next invention is to attempt a raw apple pie. We have been comparing recipes online and don't like the looks of any of them, so... we make our own.
Maybe we'll come out of this with a cookbook deal...

Day One: We Survived!!!
So, Iza and I talked Aleks into joining us... on a trial basis. He is going to see how long he can last. But I have a feeling that once his competitive nature kicks in...he'll be toast. We had raisin and date oatmeal for breakfast. That went over well, but not a buy again. Iza didn't like it.
For lunch Iza packed kiwi, apples and cinnamon, water, and a salad with her homemade balsamic vinaigrette. Definitely an eat again! I ate lunch at Wegamn's... hit the olive and sushi bar. The Edamame Hummus is a WINNER! Aleks packed PB and J along with pickles and banana chips.
For dinner we had Smart Dogs and salad. Iza had Thai soup. Aleks liked the Smart Dogs so much that he is actually excited about trying new stuff tomorrow.
I think the best of the day was Iza's Thai soup and my Edamame Hummus. It wasn't the most spectacular eating day, but we all enjoyed it, and safely made it through despite Iza getting three teeth pulled and me almost having a root canal. Don't ask...
So here we sit looking forward to tomorrow. Why, you ask? Whole food Coop Honey Roasted Peanut Butter. Our ambrosia...nectar of the gods.
Iza and I decided that we will post our favorite recipes and products.
So long, farewell, no need to say adieu. Maybe, someday you'll be vegan to-o! Goodnight...goodnight...goodnight...
