Breakfast and Lunch went fine for all of us. Dinner was another story...
Aleks made Macaroni and Chreese... (no that's not a spelling error, and it's pronounced chtrees). It's a dairy free substitute...NOT. Pasta was ok, but the sauce was sick... Stay away. I could make a homemade sauce that tastes a zillion times better. In fact, I'm going over it right now in my head, and it doesn't include melted cardboard. If I were to make a sauce now, I would melt some soy butter in a pan, add some dijon mustard, a little flour (maybe spelt) to thicken it up into a paste; then, I would add some soy or rice or almond milk (probably rice, but would taste test). I would add some soy or rice cheese substitute...cheddar flavor. Mix well, salt to taste, and top with Italian seasoned bread crumbs. That's kinda how I make my homemade mac and cheese anyways. Hmmm, will have to try this another day.
Pitched the rest of the concoction and settled in for a slice of Ezekiel 4:9 Sesame Bread with soy butter and coop peanut butter (honey roasted of course). Complete with Maxwell House vanilla coffee. Now, I'm ok.
It's interesting to listen to and see people's responses to our choice to try this. Some think we're crazy; some think we won't be able to do it; and some think we are stupid and inconveniencing them...lol, that's interesting, and it makes me want to do it more. I think that's the rebellious part of me. HA! I guess I still haven't outgrown that. Iza is finding the same response from most people, and some don't even know what vegan means...they think it's just no meat.
Aleks is still going strong...we all are. So far, it's not that hard, and we are having fun looking at recipes and trying new things. The kids are having fun making smoothies and inventing recipes. Our next invention is to attempt a raw apple pie. We have been comparing recipes online and don't like the looks of any of them, so... we make our own.
Maybe we'll come out of this with a cookbook deal...
Our poems for the day:
Aleks:
I am a dude; I ate some food.
Iza:
Citrus lemon, maple spice,
Steal a little paradise;
Ambrosia, nectar, summer sun,
Time to bake and have some fun;
Newborn cherry apple pie,
Looks so good that I could cry.
Me:
There once was a humanitarian,
who decided to eat vegetarian;
She let her kids eat
no dairy or meat,
and so they all got hungry-arian.
no...wait:
A canabalistic barbarian
decided to eat vegetarian,
it didn't last long,
it went oh so wrong;
cuz he devoured an octogenarian.
Ok...I'm done. G'night.

The Night Before Vegan
Twas the night before Vegan and all through our pad,
the smell of burnt bacon was viciously bad;
Our stomachs were bloated, our eyes bloodshot red
from all of the food we'd stuffed into our heads
Iza and I cuddling, all snug on the couch,
While visions of butter made us quite a grouch.
And Iza in her Snuggie, and I in my sweats,
Had just settled our tummies for a night of regrets.
When out in the kitchen there arose such a clatter,
I sprang from the couch to see what was the matter.
Away to the oven I flew like a boulder,
Tore open the door and forgot the pot holder.
The roast on the rack all steamy and warm
Promised tomorrow's caloric reform.
When, what to my wondering eyes should I see,
But cheesy potatoes that spoke sweet nothings to me.
"Now Iza! the pork roast, smothered in bacon!
Cheesy potatoes, our senses awakened!
Eat it today! Can't have it tomorrow!
Throw it away! Or be tempted to sorrow!
And then, in a twinkling, I heard in my tummy
A moaning and groaning like the screams of a mummy.
As I drew in my breath, and was turning around,
My stomach was rumbling...what a horrible sound
We ate so much food that will soon be forbidden,
Aleks is searching for food that we've hidden...
And the cake that we made that smelled oh so sweet.
Was iced on the table and shouted out EAT!
It was spicy and plump, a right jolly old cake,
And I laughed when I saw it, a big piece I did take!
A wink of my eye and a quick slight of hand
I gulped down a second, felt my belly expand.
I spoke not a word, but went straight to get coffee,
And filled both our cups with cream flavored like toffee.
And laying my head on the side of the couch,
And giving a nod, both our tummies screamed ouch!
We ate so much food, to enjoy our last dinner,
But the weight of the pork made me feel like a sinner .
But I heard Iza exclaim, ‘at some point in the night,
"Just eat Vegan tomorrow, and you'll be all right!"
